Cooking Tips and Tricks Megathread

Inspired by V's revelation in the BDR Fanfic thread about water instead of milk in scrambled eggs - I never knew this, made the eggs that way last night, brought them in for breakfast this morning, and holy shit they're so good.

So, let's throw around some tips and tricks for kitchen/cooking stuff. Maybe make it a sticky?

Wait what? Water instead of milk? What's the difference?

V 06-23-2010 12:19 PM

It also helps if you scramble them right in the pan with a wire whisk. It makes the curds a little smaller, but they cook quicker and more evenly.

Also...

A pinch of dill weed and some white pepper. Nothin' but WIN!

I don't use water or milk in my scrambled eggs. But I do scrambled them while in the pan.

The proteins in eggs and milk do not bind when you cook them, which is why they get runny as fuck.

Vin is our own Bill Nye.

Plus, I'll finally have a use for the white pepper I bought.

V 06-23-2010 12:34 PM

There is ALWAYS a use for white pepper...

Ohhhhh.... I never would have made that connection! Actually, scrambled eggs are one of the few things I can cook without ruining them, so - aces!

Abraham Smashington 06-23-2010 02:04 PM

Weird, I've never had runny scrambled eggs with milk, but I also load them up with cheese so that probably hides it.

V 06-23-2010 02:16 PM

It does...

In addition to binding colons, cheese binds everything else as well.

MY COLON IS AWESOME.

That is an awesome colon. I had surgery on mine a couple years ago. Observe:

Miller, you should get a doctor to look at that.

Chris Miller 06-23-2010 03:01 PM

Eh.

Martin's tip #1:

Never cook bacon naked. Unless you like it hot. Down there.

Ed Hocken 06-24-2010 09:16 AM

Follow up to Martin's tip:

Don't fry anything while naked
